Lo Mein

Lo Mein
1 lb boneless chicken                  2 carrots, julienned         
6 Tbsp soy sauce, divided           2 zucchini, sliced
3 Tbsp cornstarch                       1 onion, sliced
8 oz linguini or spaghetti               2 Tbsp fish (or oyster) sauce
4 oz mushrooms, sliced               sesame oil (a few tablespoons)

1. Slice chicken thinly and toss with 3 Tbsp soy sauce, 3 Tbsp cornstarch. Set
aside to marinade.
2. Boil linguini. Drain and rinse with cool water. Set Aside. Make 3-2-1 sauce
with 3 Tbsp soy sauce, 2 Tbsp fish (or oyster) sauce, and 1 Tbsp sesame oil.
Stir to mix.
3. Heat wok over high heat until almost smoking. Add in sesame oil, tilting to
coat sides. Cook chicken 1-3 minutes. Remove and set aside.
4. Add a little more oil, then cook carrots and onions about 2 mins. Add in
additional vegetables.
5. Add in chicken and cooked noodles. Stir and toss for 1 min.
6. Make a well in the middle of the food by pushing everything out to the

edges. Add 3-2-1 sauce. Toss to coat all ingredients.

1 bag Chester’s Puffcorn (found in chip aisle)
1 ¼ c. sugar
2 squares butter
¼ c. water

Bring to bill on the stove and cook to hardball stage. Approximately
3 minutes. Put corn pops in large paper bag. Pour syrup over the corn pops and shake.
Pour out onto a jelly roll pan to cool. 

Creamy Cilantro-Avocado Dressing

Creamy Cilantro-Avocado Dressing

½ ripe avocado
¾ c. packed fresh cilantro
1/ c. nonfat plain yogurt
1 clove garlic
1 tbsp lime juice
½ tsp salt

Place all ingredients in a blender. Blend until smooth.

Chicken Tortilla Soup

Chicken Tortilla Soup

  • 2 whole Boneless, Skinless Chicken Breasts
  • 1 Tablespoon Olive Oil
  • 1-1/2 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Salt
  • 1 Tablespoon Olive Oil
  • 1 cup Diced Onion
  • 1/4 cup Diced Green Bell Pepper
  • 1/4 cup Red Bell Pepper
  • 3 cloves Garlic, Minced
  • 1 can (10 Oz. Can) Rotel Tomatoes And Green Chilies
  • 32 ounces, fluid Low Sodium Chicken Stock
  • 3 Tablespoons Tomato Paste
  • 4 cups Hot Water
  • 2 cans (15 Oz. Can) Black Beans, Drained
  • 3 Tablespoons Cornmeal Or Masa

  • FOR THE GARNISHES:
  • Sour Cream
  • Diced Avocado
  •  Tortilla chips, crumbled on top

Preheat oven to 375 degrees. Mix cumin, chili pepper, garlic powder, and salt. Drizzle 1 tablespoon olive oil on chicken breasts, then sprinkle a small amount of spice mix on both sides. Set aside the rest of the spice mix.
   Place chicken breasts on a baking sheet. Bake for 20 to 25 minutes, or until chicken is done. Use two forks to shred chicken. Set aside. 
    Heat 1 tablespoon olive oil in a pot over medium high heat. Add onions, red pepper, green pepper, and minced garlic. Stir and begin cooking, then add the rest of the spice mix. Stir to combine, then add shredded chicken and stir.
   Pour in Rotel, chicken stock, tomato paste, water, and black beans. Bring to a boil, then reduce heat to a simmer. Simmer for 45 minutes, uncovered.
   Mix cornmeal with a small amount of water. Pour into the soup, then simmer for an additional 30 minutes. Check seasonings, adding more if needed---add more chili powder if it needs more spice, and be sure not to under-salt. Turn off heat and allow to sit for 15 to 20 minutes before serving.
Ladle into bowls, then top with sour cream, diced avocado, and crumbled tortilla chips (The garnishes really make the soup delicious.)
Notes: **I have used leftover chicken from another meal and just added all the seasonings in with the peppers and onions, and it still tasted delicious. 
** I have also omitted the red and green peppers because I didn't have any and the soup still tastes delicious without them.

Pork Tenderloin

Cut pork tenderloin into 1/2 inch pieces.
Lay on chopping board or wax paper.  Pound with a mallet. If you buy the pork already sliced and it is 1/2" thick or less, no need to pound it.


Season with salt, pepper, and garlic powder (or granulated garlic) and pound thin.
Beat two eggs. 
Dip meat in egg, then dip bread crumbs or Japanese Panko crumbs to cover the meat.
Rub in hard.
Turn and season again, then dip in egg and Panko a second time.
Let set for a time.about 15mins. This makes the more crumbs hold on better.
When ready to fry. Heat grill or skillet. Put butter or oil in skillet and let get hot
Fry 3-4 minutes on each side. Put in oven at 400 degrees covered with foil if you have to cook the tenderloins in shifts.

Homemade "Shout"

Homemade Stain Remover (Shout)
(I had Palmolive on hand, so that’s what I used)
Mix everything together and pour into a spray bottle. I got this one at Wal-Mart for about a buck. (I actually got SEVERAL of them for the array of natural/homemade cleaners I have started using. My inventory continues to expand!)
Before you go to use it…if it’s been sitting for awhile…give it a good shake.  As you can see in this picture…it does tend to separate a bit. But after a quick shake it’s good to go.  To use: spray on stains as you normally would.  I usually let mine “soak in” for a few minutes at least.  Then launder as usual.
