Beef Jerky


Beef Jerky                                            from: Mary Beth Keim

3 TO 5 lbs. Beef (rump roast, slice thin like bacon)
½ c. soy sauce                                        1 tsp. Garlic powder
¼ c. liquid smoke                                     1 tsp. Onion powder
2 tsp. Lemon juice                                    1 tsp. Pepper
1 tsp. Meat tenderizer

Combine all ingredients, except the beef.  Layer beef in flat pan, basting each slice, or put in a gallon sized Ziploc bag.  Let marinate 24 hours, stirring or turning often.  Dehydrate.  Store in an airtight container.
