Black Bean Soup


Black Bean Soup                     
1 Tbsp canola oil                                1/2 c. prepared salsa         
1 small onion, chopped                     1/4 tsp. salt
1 Tbsp. chili powder                           1 Tbsp. lime juice
1 tsp. ground cumin                            Garnishes: sour cream, cilantro
1 15-oz cans black beans, rinsed                   
3 c. water
Beat oil in lg. saucepan over medium heat.  Add onion and cook, about 2-3
minutes. Add chili powder and cumin, cook additional minute. Add beans,
water, salsa, and salt. Bring to a boil; reduce heat and simmer 10 mins.
Remove from heat and stir in lime juice. Garnish with sour cream and cilantro
IF USING DRY BEANS:  Rinse, go through beans.Put beans in a bowl and
cover with water so water is about 2" above beans. Remove any floating beans.
Soak overnight on the counter. Then follow directions above.
