T. olive oil 1
(14 oz) can diced tomatoes, undrained

med. onion, diced 2 cans
(14 oz) chicken broth
2
med. carrots, diced 3 c.
water
1
celery stalk, diced 1/2
tsp. rosemary
2
med. zucchini, diced 1/2 tsp salt
1
garlic clove, minced 1/2
tsp. pepper
3
c. thinly sliced cabbage
1
(15 1/2 oz) can cannellini beans, drained
Heat
oil in a large stockpot over medium heat.
Add onion; cook, stirring
occasionally,
6 mins or until softened. Add carrots and celery; cook, stirring
occasionally,
3 mins. Add remaining ingredients. Cover
and bring to a boil; reduce
heat
and simmer gently 1-2 hours. Serve with
parmesan cheese. Serves 6.
Per serving: 200 calories, 5 g. fat, 7g. protein,
31 g. carbs, 7 g. fiber, 900 mg sodium
