Lentil Soup From:

1 lb.
lentils (Rinsed and picked through)
1 medium
onion, diced
3-4 Roma
tomatoes or 2 medium, diced
1/2 bunch
cilantro, chopped finely
In a large
pot, place enough oil to just barely cover the bottom. Cook
onions until
golden brown. (Don't be shy with the
onions. The more
the
better.) Add tomatoes and cilantro to
the onions. Salt generously.
Stir mixture
and cook thoroughly. You should now have
a good
mixture of
golden onions, tomatoes, and cilantro with plenty of
salt. Cook 5-7 min.
Add the washed lentils and plenty of water to
the
pot. Bring to a boil, then simmer until cooked.
