Persimmon Bread From: Allrecipes.com
1 c. persimmon pulp 1/2 tsp. nutmeg
2 tsp. bkg soda 1 1/2 tsp.
salt
3 c. sugar 2/3
c. water
1 c. vegetable oil 3 c. flour
4 eggs 1 c. chopped
walnuts
1 1/2 tsp. cinnamon
Preheat oven 350 degrees.
Grease two full size bread pans. In a small
bowl, stir together the
persimmon pulp and baking soda. Let
stand 5
mins. to thicken pulp.
In a medium bowl, combining
sugar, oil, eggs, cinnamon, nutmeg, and
salt. Blend until smooth. Mix
in persimmon pulp and water alternately with
flour. Fold in nuts. Fill bread pans 2/3 full. Bake
1 hour, or until toothpick
comes out clean. Cool in pan 10
mins. before removing to a wire rack.
