Wheatena Muffins


Wheatena Muffins                     From Sybil Maddox
Another yummy one from the Bed & Breakfast!
3 c. Wheatena               2 eggs, beaten
1 c. boiling water           2 c. buttermilk
1/2 c. oil                       2 1/2 c. flour
1 1/2 c. sugar                1 1/2 tsp. bkg soda
1 tsp. salt
Pour boiling water over Wheatena in a large bowl and mix until well blended. 
Let stand. Combine oil, sugar, eggs, and buttermilk in large bowl.  Stir in
Wheatena mixture.  Add flour, soda, and salt to other ingredients and mix
well.  Fill greased muffin cups 2/3 full and bake at 400 degrees for 15-20 mins.  
Serve with butter and honey, or jam. 
Note: Batter can be stored in refrigerator for up to 6 weeks.
