Brenda's Zucchini Bread


Zucchini Bread             From: Brenda Ratledge

3 eggs                                      1 tsp. baking soda
2 c. sugar                                 1 tsp. baking powder
1 c. oil                                      1 tsp. salt
3 c. grated zucchini                   ¾ c. chopped walnuts
3 c. flour                                   ¾ c. coconut, shredded
1 tsp. cinnamon                         2 tsp. vanilla

Blend eggs, sugar, and oil.  Add zucchini.  Add vanilla, flour, cinnamon,
baking soda, baking powder, salt, walnuts, and coconut. Blend well.
Pour into two loaf pans.  Bake 325-350 degrees for 1 hour.
