Pear Walnut Coffee Cake


Pear Walnut Coffee Cake                      From: Cindy Savoldi

A staple at the bed and breakfast.  Delicious!

¼ c. soft butter or marg.             ½ tsp. each baking soda and baking powder
½ c. gran sugar                         ¼ tsp. salt
1 egg                                       ½ c. sour cream
1 c. all-purpose flour                  1 lg. pear, diced (apple can be substituted)
½ tsp. vanilla

Nut Topping

Mix ½ c. packed br. sugar, ¾  tsp. cinnamon, and 2 Tbsp. marg. until well mixed.
Stir in ½ c. chopped walnuts.

Cream butter and sugar until light and fluffy.  Beat in vanilla, then egg, beating
until smooth.  Mix flour, soda, baking powder, and slat.  Add to butter mixture
alternately with sour cream, mixing just to blend aftereach addition.  Fold in
pears.  Spread in greased 9”x9” baking pan.  Sprinkle nut topping evenly. 
Bake 350 degrees for 40-45 mins. until top is well browned.
