Brown Rice &
Wheat Berry Pilaf

c. brown rice
1
c. wheat berries
1.
cup mushrooms, diced
1/4-1/2
c. onion, diced
6
c. chicken broth
Optional
add ins: carrots, pine nuts, celery, parsley, kale, 1 bay leaf, thyme
Can
sautee vegetables, then ad in after the rice and wheat have cooked.
Put
all ingredients in a large pot. Bring to
a boil, cover and simmer for 1 hour.
Do
not take lid off while cooking.
